Steaming curdle the eggs. It is necessary only in the low oven in a water bath. Steaming is probably better than sitting in an oven to dry. The work in the restaurant, was brought to the road and then into the oven. I am a server and bartender, so my best guess is that cooking, such as eggs is, the steam is not really "the whole enchilada." It must be cooked "around" .. To heat water on the oven does the trick.
Does that make sense? Hope it helps.
PS could curdle, because the steam is not hot enough to cook all the ingredients

I know from experience that you never encrypted eggs.always steam cooking creme brulee in the right way, water bath in oven.
